The Fatberg embryo consists of a mix of 70% beef fat and 30% pork fat. Beef fat is brittle and yellowish whereas pork is soft and pinkish white. Both fats need to be cut to size for the rendering process. The preferred tools at this stage are scissors for pork and knife and hand for beef.
